Delicious fish curry by Kirsten Vaughan


 
Ingredients
150g white fish

1 tsp ground turmeric
... garlic (finely chopped
– add whatever suits your taste)
2 tsp ginger paste
1/2 chopped red onion
2 tsp ground cumin
1 tsp chilli paste

half a tomato (chopped)
100g potato (cubed)
cauliflower
carrots
peas
1/2-1 cup water
Fresh coriander
salt to taste



Directions

1. Toss the fish in the turmeric until well coated
2. Heat a non-stick fry pan and very lightly spray with oil, add garlic, ginger, onion, chilli and cumin. Brown gently for 10 min until the onion is soft
3. Add the fish and cook until it's lightly coloured then add tomato, potato and veges. Cover and simmer for 15 minutes
4. Uncover and simmer for 5 minutes, remove from heat and add the coriander

For a lower carb option use the GO FIGURE Low Carb Pasta or Rice. You could also substitute the fish for chicken and add cinnamon. Any other vegetables like kumera, pumpkin, broccoli would also be great.
