Kung Pow(!!!) Chicken by Sarah Simonsen
Serves two (generously!)

INGREDIENTS
Canola oil (or alternative oil)
2 teaspoons of crushed garlic
1 large brown onion (sliced)
2 chicken breasts (cubed)
1 carrot (peeled and sliced)
1 head of broccoli (chopped)
1 small capsicum (sliced)
3 button mushrooms (sliced)







 

SAUCE
3/4 C of water
3 tablespoons of low sodium soy sauce
1 teaspoon of crushed ginger
2 teaspoons of minced Chili
1/4 teaspoon of Sugromax liquid sweetener (amount will vary depending on
what sweetener you use)
2 teaspoons of cornflour (optional but gives a nice sticky texture to the
sauce)

METHOD
1) heat oil In pan
2) add onion and garlic, stirfry until onion goes clear
3) add chicken and carrot, stirfry until chicken is cooked through
4) add sauce and remain Veges.
5) lower temperature, cover pan and allow Veges to cook through.

Serve over GoFigure Angelhair pasta or rice for a tasty dinner!!
