1. Rinse and drain your angel hair in a sieve.
2. Dice 1 capsicum, slice 1 spring onion, add 1 cup of mung bean sprouts.
3. Dressing: blitz 1/2 diced red chilli, juice of 1 lime, 1 tsp grated fresh ginger, 1 tsp tamari or soy sauce, 1 Tbsp of peanut butter. I added a bit of water as well. Set aside.
4. Stir fry prawns or chicken, angel hair in 1 tsp of coconut oil
5. Roughly chop 1/4 cup of each coriander, basil, mint -
6. Stir dressing through veges, add to pasta prawn mix. Carefully toss through chopped herbs and serve.
Optional - scatter with toasted chopped nuts.
